the perfect (protein packed) parfait

If you've spent a morning with me, you've likely seen me eating some version of this yogurt bowl. It has been a tried and true favorite for....ever. While it's taken on different varieties of yogurt, fruit and granolas, it has been consistent in fueling my day with a great source of carbs, fat, and protein.

a few tips on making your own:

Good food isn't found without good ingredients. When choosing yogurt, I look for the 'greek yogurt' options (ex: Fage, Siggi’s, Icelandic) as these are higher in protein and lower in sugar. I love the plain version, but I fully recognize why some use it as a substitution for sour cream (hi, it's me). While I believe the right toppings mask the flavor, the Siggi’s vanilla and fruit flavors are a great alternatives, especially if you want to ease into the yogurt scene. Siggi’s also provides tasty dairy free options for those who don't get along with dairy, or rather, dairy doesn't get along with them.

on to fruit

This topping is best decided based on the season, but blueberries tend to be the most reliable. When the time is right try fruits like:

  • strawberries

  • blackberries

  • kiwis

  • raspberries

to add some extra flavor and a boost in vitamins, minerals, and antioxidants.

saving the best for last

This ingredient is hands down my favorite part - it’s also the part I have to be the most mindful of, the granola. Something to know about me, I will eat the entire bag. While there are some great options in store (Purely Elizabeth) my favorites are found in small local coffee shops and bakeries. I found the one pictured above at the Colorado Marketplace & Bakery in Silverthorne, CO. Another one from Kick Ash in Door County, WI lives in my pantry year round. Wherever your favorite is found I highly recommend adding a sprinkle on top and saving the biggest chunk for your last bite at the end ;)

prepping ahead?

Simply put the granola in a small, repurposed salad dressing container to pour over when you’re ready to eat. I’ve found this helps with not only preventing soggy granola, but with portion control as well.
